Pasta with Shrimp in Garlicky Butter Sauce



This recipe brings flavor and simplicity together for one of the easiest, tastiest dinners you can make in the time it takes to boil pasta. Fresh, briny shrimp tossed in a simple butter sauce with garlic and shallot leaves no room for excuses—it’s homemade goodness in less than 10 minutes. 

Serves 2

Ingredients
  1. 4 oz rotini, or other short pasta
  2. 2 tbsp unsalted butter
  3. 2 garlic cloves, finely chopped
  4. 1 small shallot, finely chopped
  5. 1/2 lb peeled, deveined (medium) shrimp
  6. sea salt
  7. freshly ground black pepper
  8. 1 tbsp extra virgin olive oil, plus more for drizzling
  9. chopped Italian parsley, for garnish
Preparation
  1. Cook the pasta in boiling, salted water 7-8 minutes. Drain.
  2. Heat a skillet over medium-low heat and melt the butter. Add the garlic and shallot and simmer slowly 2 minutes.

  1. Add the shrimp and season with salt and pepper. Add 1 tablespoon of olive oil and cook the shrimp until pink and just cooked through, 2-3 minutes.

  1. Add the drained pasta to the skillet and toss well to coat.

To serve, divide the pasta and shrimp between 2 bowls, drizzle with a little more olive oil, and sprinkle with chopped parsley. Serve right away.

  1. It also works well just roasting the garlic and shrimp in the oven, and then adding to the cooked pasta. Simple and delicious!!
