Ingredients
- 4 oz rotini, or other short pasta
- 2 tbsp unsalted butter
- 2 garlic cloves, finely chopped
- 1 small shallot, finely chopped
- 1/2 lb peeled, deveined (medium) shrimp
- sea salt
- freshly ground black pepper
- 1 tbsp extra virgin olive oil, plus more for drizzling
- chopped Italian parsley, for garnish
Preparation
- Cook the pasta in boiling, salted water 7-8 minutes. Drain.
- Heat a skillet over medium-low heat and melt the butter. Add the garlic and shallot and simmer slowly 2 minutes.

It also works well just roasting the garlic and shrimp in the oven, and then adding to the cooked pasta. Simple and delicious!!
