Pan-Grilled Turkey Burgers with Sautéed Mushrooms


Try a switch from traditional beef-mushroom burgers with ground turkey. Juicy thigh meat grills up deliciously tender and tasty — just add buttery sautéed mushrooms and creamy Swiss cheese for an easy and very inviting burger night.


Serves 2

Ingredients
  • 2/3 lb ground turkey thigh
  • 1 garlic clove, finely chopped
  • 1 tbsp finely chopped flat-leaf parsley
  • 1 tsp Worcestershire sauce
  • 1/4 tsp red pepper flakes
  • sea salt
  • freshly ground black pepper
  • 2 tsp unsalted butter
  • 1/3 cup thin, vertically sliced onion
  • 4 oz crimini mushrooms, thinly sliced
  • olive oil, for brushing
  • 2 whole-wheat sandwich buns, lightly toasted
  • 2 slices Swiss cheese

Preparation
  1. Combine the first 5 ingredients (through red pepper flakes) in a medium bowl and season with salt and pepper.
  2. Using damp hands, form the mixture into 2 equal patties. Place on a plate and refrigerate about 15 minutes to help the mixture hold together while cooking.
  3. While the burgers chill, heat a skillet over medium heat and add the butter. When melted and sizzling, add the onions and sauté until beginning to brown and soften, 3-4 minutes.
  4. Add the mushrooms and season with salt and pepper. Sauté until the mushrooms and onions are tender and browned, 4-5 minutes. Remove from the heat and let stand while the burgers grill.

  1. Heat a grill pan over medium-high heat.
  2. Brush the pan with olive oil and grill the burgers 5 minutes on 1 side, until browned and grill marks appear. Turn and grill until almost cooked through, 3-4 minutes, depending on thickness. 
  3. Top each burger with a slice of cheese and continue grilling until the burgers finish and the cheese melts (place a sheet of foil over the grill pan to help it melt quickly, if desired), 1-2 minutes longer.
  4. Brush the insides of the buns with olive oil. Place a burger on each bottom half and divide the mushroom mixture on top.
