Mandarin-Apple Slaw with Sweet-and-Sour Dressing



When you need a light, fresh, and flavorful side dish for a casual main coarse, this slaw will do the trick. The sweet-and-sour dressing complements the combination of sweet fruits and savory vegetables in the slaw for an inviting balance of taste and texture. Build in time to let it chill at least one hour and it’s ready for the table—or the tailgate.

Serves 5-6

Ingredients
  • 1 small can mandarin oranges in light syrup
  • 2 tbsp fresh lime juice
  • 2 tsp white wine vinegar
  • 2 tsp white sugar
  • 1/4 tsp dried red chile flakes
  • sea salt
  • freshly ground black pepper
  • 2 cups thinly sliced green cabbage
  • 2 scallions, thinly sliced
  • 1 medium crisp red apple, cored and chopped
  • 1 small carrot, peeled and shaved into small strips
  • 1/4 cup black raisins
  • 2 tbsp cup chopped fresh herbs (such as basil, chives, and parsley)
Slaw Ingredients
Preparation
  1. Place the oranges in a sieve, straining the syrup into a bowl. Reserve 3 tablespoons of syrup and 1/2 cup orange pieces, halved.
  2. Combine the lime juice, vinegar, sugar, chile flakes, and reserved 3 tablespoons of syrup in a bowl and season with salt and pepper.
Sweet-and-Sour Dressing
  1. Combine the cabbage, 1/2 cup of reserved mandarin orange pieces, and remaining ingredients in a medium bowl. Pour the dressing over the slaw and toss gently to combine.
Slaw Mixture
Cover and refrigerate at least 1 hour before serving. The slaw goes great with Easy, Less-Fat Fried Chicken!
