Pita Pizzas with Prosciutto and Red Pear



Whether you want fast, easy pizzas for a party or a casual dinner, pita bread makes it simple. Keep the toppings to a minimum, and choose ones that complement each other with a good balance of tastes.

Here, thin slices of sweet red pear get together with salty, savory prosciutto and a little red onion to create tasty little pizzas that are ready in about 10 minutes.

Note: You don’t need a layer of tomato sauce on the pitas, as is common with actual pizza dough. Here, a bit of shredded cheddar cheese acts as the base for the other toppings and adds—well, cheesiness.


Serves 4-5

Ingredients
  • 4 8-inch pitas
  • olive oil, for brushing
  • 1 cup shredded sharp cheddar cheese
  • 1 large red pear, very thinly sliced
  • 5 oz very thin slices of prosciutto, cut or torn into thin strips
  • 1/2 cup short, thin strips of red onion
  • dried red chile flakes, for topping (optional)

Preparation
  1. Preheat the oven to 400° F. Line a shallow baking pan with parchment paper.
  2. Lay 2 pitas on the pan and brush the tops with olive oil. Bake until beginning to brown, 4-5 minutes.
  3. Remove the pan rom the oven and turn the pitas over. Brush lightly with olive oil and divide 1/2 the shredded cheese on top. Divide 1/2 the pear, prosciutto, and onion on top of the cheese (folding the prosciutto as needed) and bake until browned and beginning to crisp, 4-5 minutes.
  4. Transfer to a cutting board and repeat with the remaining pitas and toppings.

Cut each pizza into 4 wedges and sprinkle with chile flakes, if desired.
