Creamy Turkey and Rice with Broccoli and Fried Egg


Lean turkey breast, short-grain rice, and an over-easy egg combine in this warm, savory, nutritious one-pan dish—as inviting as it is simple and easy. The key is the creaminess—milk, chicken broth, a little flour, that’s it.

Tip: Stir-fry 3/4 cup arborio rice with a tablespoon of olive oil in a 10-inch, nonstick skillet over medium heat for about a minute. Add 1-1/4 cups vegetable (or chicken) broth, bring to a simmer, then reduce the heat to low, cover, and cook until tender and fluffy, 12-14 minutes.

Ingredients
  • 2 tbsp olive oil
  • 2 cups coarsely chopped broccoli florets
  • 1 shallot, thinly sliced
  • 1 garlic clove, finely chopped
  • 1 cup low-fat milk
  • 1 cup chicken broth
  • 2 tbsp all-purpose flour
  • 3/4 tsp ground sage
  • sea salt
  • freshly ground black pepper
  • 2-1/2 cups cooked arborio rice (about 3/4 cup uncooked rice)
  • 3/4 lb cooked turkey breast, diced
  • 1 tbsp unsalted butter, divided
  • 4 large eggs

Preparation
  1. Heat a large skillet over medium heat and add the oil, swirling to coat. Add the broccoli, shallot, and garlic. Cook, stirring frequently, until the vegetables are crisp-tender, 5 minutes.
  2. Whisk together the milk, broth, flour, and ground sage until well incorporated. Stir the milk mixture into the skillet and season with salt and pepper. Bring to a simmer and cook, stirring frequently, until the sauce begins to thicken, 2-3 minutes.
  3. Stir in the cooked rice and turkey breast. Re-season with salt and pepper, if needed, and warm over medium-low heat until hot throughout, 3-4 minutes.

  1. Meanwhile, heat a nonstick skillet over medium heat and add 1/2 the butter. When the butter begins to sizzle, crack 2 eggs into the skillet and fry until the whites are set and the yolks are still runny (or until desired degree of doneness). Repeat with the remaining butter and 2 eggs.
To serve, divide the turkey and rice mixture among 4 shallow bowls and top each with a fried egg. Sprinkle the egg with salt and pepper and serve right away.
