Grilled Lamb Chops with Orange and Apricot Drizzle



Grilled lamb chops, like steaks, don’t need sauces or drizzles or any kind of condiment to finish them off because the meat itself is so flavorful. That said, sometimes a light, fresh, and fruity concoction can add a bit of extra zing to complement the savory lamb or beef.

Here, the orange and apricot drizzle doesn’t get any simpler to make—but it does add a touch of tasty sweetness to finish the juicy, tender lamb.

Serves 2

Ingredients
  • 3 tbsp fresh orange juice
  • 1-1/2 tsp apricot preserves
  • 1/2 tsp thinly sliced orange zest
  • sea salt
  • freshly ground black pepper
  • olive oil, for rubbing the grill grate
  • 4 lamb rib chops, 1-1/4-inch thick (about 1-1/2 lbs total)

Preparation 
  1. Combine the orange juice, apricot preserves, and orange zest in a small bowl, stirring well to dissolve the preserves. Season with salt and pepper and set aside.
  2. Light a grill for medium-high heat.
  3. Rub the grill grate with olive oil. Season the lamb with salt and pepper and grill until medium-rare, 3-4 minutes per side, depending on thickness (or until desired degree of doneness).
  4. Transfer the lamb chops to a board and let rest 3 minutes.

Place the chops on a platter and drizzle with the orange-apricot mixture. Serve right away.
