Sometimes the simplest flavors and ingredients come
together for the tastiest dishes on the table—and this is one of them. Three
ingredients—raw beets, fresh orange, honey—combine for a flavorful balance of
savory, bright, and sweet all at once.
Roasting beets brings out their own sweetness,
essentially caramelizing this earthy vegetable to develop its richest flavor
right in your oven.
Serves 3 (easily doubled)

- 4 medium-small beets (about 1 lb total), peeled, each cut into 8 small wedges
- olive oil, for drizzling
- 1 medium naval orange, halved
- sea salt
- freshly ground black pepper
- 2 tbsp honey
- 1/2 tsp chopped orange zest

Preparation
- Preheat the oven to 400° F.
- Place the beets in a small roasting pan lined with aluminum foil and drizzle with olive oil. Squeeze the juice of half the orange over the beets (reserve the other half for another use). Season with salt and pepper and toss well to combine.
- Cover the pan with aluminum foil and roast until the beets are almost tender, 30-35 minutes.
- Remove the top foil and drizzle the beets with honey, tossing to coat. Continue roasting, uncovered, until the beets are tender and beginning to brown, 6-7 minutes.
