Welcome!

Creating recipes isn't a pastime—it's a passion. And a lot of fun.

The rules are few: Use 99% fresh ingredients (or thereabouts); make the dish simple but flavorful; make the dish flavorful but simple; be creative, not silly.

With this blog, I want to share new recipes, along with tips on ingredients and preparation, and, hopefully, show new cooks (and non-cooks) the pleasure in setting the table with a delicious homemade meal. The Briny Lemon is about fresh, simple, flavorful ingredients and easy cooking methods that help you bring the best to your family table. Your comments are welcome!

Pita Pizzas with Prosciutto and Red Pear

Whether you want fast, easy pizzas for a party or a casual dinner, pita bread makes it simple. Keep the toppings to a minimum, and choose ones that complement each other with a good balance of tastes.

Here, thin slices of sweet red pear get together with salty, savory prosciutto and a little red onion to create tasty little pizzas that are ready in about 10 minutes.

Note: You don’t need a layer of tomato sauce on the pitas, as is common with actual pizza dough. Here, a bit of shredded cheddar cheese acts as the base for the other toppings and adds—well, cheesiness.

Serves 4-5

Ingredients
  • 4 8-inch pitas
  • olive oil, for brushing
  • 1 cup shredded sharp cheddar cheese
  • 1 large red pear, very thinly sliced
  • 5 oz very thin slices of prosciutto, cut or torn into thin strips
  • 1/2 cup short, thin strips of red onion
  • dried red chile flakes, for topping (optional)

Pizza Toppings
Thinly Sliced Pear
Preparation
  1. Preheat the oven to 400° F. Line a shallow baking pan with parchment paper.
  2. Lay 2 pitas on the pan and brush the tops with olive oil. Bake until beginning to brown, 4-5 minutes.
  3. Remove the pan rom the oven and turn the pitas over. Brush lightly with olive oil and divide 1/2 the shredded cheese on top. Divide 1/2 the pear, prosciutto, and onion on top of the cheese (folding the prosciutto as needed) and bake until browned and beginning to crisp, 4-5 minutes.
  4. Transfer to a cutting board and repeat with the remaining pitas and toppings.
