Rice Salad with Peas and Honey-Orange Dressing


This bowl full of goodness is on the table in the time it takes to cook the wild rice. Grains, seeds, nuts, peas, fruit—it’s all good, and good for you. The best part? A combination of crunchy, chewy, and tender textures along with a sweet and slightly tart fresh dressing make this simple side dish as flavorful as it is nutritious.

5-6 servings

Ingredients
  • 1/4 cup fresh orange juice (from 1 large or 2 small naval oranges)
  • 2 tbsp honey
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp soy sauce
  • 1/2 tsp toasted sesame oil
  • 1-1/2 cups cooked wild rice
  • 1-1/2 cups cooked basmati rice
  • 1/2 cup frozen green peas, thawed
  • 1/3 cup broken walnut pieces
  • 1/3 cup dried cranberries
  • 1/4 cup roasted pumpkins seeds 

Preparation
  1. Combine the orange juice, honey, vinegar, soy sauce, and sesame oil in a bowl, stirring until the honey is dissolved.
  2. Combine the wild rice, basmati rice, and remaining ingredients in a medium bowl. Stir in the honey-orange dressing and let stand 30 minutes at room temperature. (May also be covered and refrigerated overnight. Bring to room temperature before serving.)
